The fresh black truffle (Tuber uncinatum Chatin) is also known as Scorzone Invernale (winter truffle) due to its similarity to the summer truffle, but only low temperatures allow this truffle to mature.
It has a pleasant and distinctive aroma, reminiscent of porcini mushrooms, hazelnuts and Grana cheese.
The gleba (inner flesh) is hazelnut to dark brown in colour with light branched veins.
The peridium (outer skin) is black and warty, with poorly developed warts.
